Bratten's Boston Clam Chowder

2 6-oz cans minced clams

1 C onions, minced

2 C potatoes, diced finely

1 quart ½ & ½ cream

¾ C flour

1 C finely diced celery

¾ C butter

1½ t. salt

few grains pepper

½ t. sugar

Simmer vegetables in juice drained from clams + enough water to barely cover, til tender (abt. 20 min.). In meantime, melt butter; add flour & blend well & cook 1-2 min. Add cream; cook & stir until smooth & thick, using a wire whisk. Add undrained veg. & clams & heat through. Season with salt, pepper, sugar.
